Ingredients:

  • 2 cups (250g) self-rising flour, plus more for dusting
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) milk
  • Vegetable oil, for frying
  • Optional Toppings: Powdered sugar, cinnamon sugar, glaze

Instructions:

  1. In a large bowl, whisk together the self-rising flour and sugar. Add the milk and stir until just combined. Do not overmix – a few lumps are fine.
  2. Pour vegetable oil into a deep frying pan or pot, filling it to a depth of about 2-3 inches. Heat the oil over medium-high heat until it reaches 350°F (175°C). (Test the oil with a small piece of dough – it should sizzle gently.)
  3. Lightly flour a clean surface. Turn out the dough and gently pat it down to about ½-inch thickness. Use a doughnut cutter (or biscuit cutter and smaller cutter) to cut out doughnuts.
  4. Carefully lower a few doughnuts at a time into the hot oil. Fry for 2-3 minutes per side, or until golden brown and cooked through.
  5. Remove the doughnuts from the oil with a slotted spoon or spider strainer and place them on a plate lined with paper towels to drain excess oil.
  6. While still warm (optional, but recommended!), toss the doughnuts in powdered sugar, cinnamon sugar, or dip them in your favourite glaze. Serve immediately.
