Ingredients:
- 2 cups (250g) self-rising flour, plus more for dusting
- 1 cup (200g) granulated sugar
- 1 cup (240ml) milk
- Vegetable oil, for frying
- Optional Toppings: Powdered sugar, cinnamon sugar, glaze
Instructions:
- In a large bowl, whisk together the self-rising flour and sugar. Add the milk and stir until just combined. Do not overmix – a few lumps are fine.
- Pour vegetable oil into a deep frying pan or pot, filling it to a depth of about 2-3 inches. Heat the oil over medium-high heat until it reaches 350°F (175°C). (Test the oil with a small piece of dough – it should sizzle gently.)
- Lightly flour a clean surface. Turn out the dough and gently pat it down to about ½-inch thickness. Use a doughnut cutter (or biscuit cutter and smaller cutter) to cut out doughnuts.
- Carefully lower a few doughnuts at a time into the hot oil. Fry for 2-3 minutes per side, or until golden brown and cooked through.
- Remove the doughnuts from the oil with a slotted spoon or spider strainer and place them on a plate lined with paper towels to drain excess oil.
- While still warm (optional, but recommended!), toss the doughnuts in powdered sugar, cinnamon sugar, or dip them in your favourite glaze. Serve immediately.
