Ingredients:

  • 1 pound (450g) sirloin steak, cut into 1-inch cubes
  • 4 tablespoons (57g) unsalted butter
  • 2 cloves garlic, minced (about 1 tablespoon)

Instructions:

  1. Melt the butter in the skillet over medium heat. Add the minced garlic and cook for 30-60 seconds, or until fragrant (but not browned – burnt garlic is no bueno!). Remove from heat.
  2. Return the skillet to high heat. Add the steak bites in a single layer, being careful not to overcrowd the pan. Sear for 2-3 minutes per side, until nicely browned on all sides and cooked to your desired level of doneness.
  3. Reduce the heat to low. Return the skillet to low heat, Pour the garlic butter over the steak bites and toss to coat evenly. Serve immediately.
