- 1 cup (250g) Creamy Natural Peanut Butter
- 1/2 cup (120ml) Honey or Maple Syrup
- 1/2 cup (90g) Mini Semi-Sweet Chocolate Chips
Instructions:
- In a large mixing bowl, combine the peanut butter and liquid sweetener. Whisk vigorously with a spatula until the mixture is glossy and completely homogenous to ensure even coating.
- Add the rolled oats and chocolate chips to the bowl. Use a folding motion, scraping the bottom of the bowl frequently, until the mixture looks like thick, pebbly dough. Allow to sit for five minutes if the mixture feels too loose.
- Using a 1-tablespoon cookie scoop, drop uniform mounds onto a parchment-lined sheet. Roll each mound between your palms using firm pressure to compress the air out and prevent shattering.
- Place the tray in the refrigerator for 30 minutes to allow the lipids in the peanut butter to solidify, creating a firm, portable structure.
