Ingredients:

  • 8 oz (225g) semi-sweet chocolate, chopped
  • 1/2 cup (115g) unsalted butter, cubed
  • 3/4 cup (150g) granulated sugar
  • 3 large eggs, room temperature
  • 1/2 cup (45g) unsweetened cocoa powder

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. Combine the chopped chocolate and cubed butter in a microwave-safe glass bowl. Microwave in 30-second bursts, stirring in between, until the mixture is glossy and completely smooth.
  3. Whisk the granulated sugar into the melted chocolate mixture until fully incorporated.
  4. Add the eggs one at a time, whisking vigorously after each addition until the batter looks shiny and smooth.
  5. Sift in the cocoa powder and stir with a rubber spatula until no dry streaks remain.
  6. Pour the batter into the prepared pan. Bake for 25–30 minutes, or until the edges are set and the center has a slight wobble.
  7. Let the cake cool in the pan for 15 minutes before flipping it onto a plate.
