Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts or flank steak
  • 2 tbsp olive oil
  • 1 packet fajita seasoning
  • 1 large onion, sliced
  • 2 bell peppers (different colors), sliced
  • 20 small flour tortillas (6-inch diameter)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup guacamole
  • 1 cup pico de gallo
  • 1 bunch cilantro, chopped
  • 1 lime, cut into wedges

Instructions:

  1. Marinate chicken/steak and cook until done.
  2. Sauté onions and peppers until tender-crisp.
  3. Warm tortillas in a dry skillet or microwave.
  4. Arrange tortillas around the perimeter of serving platter, fill with protein and veggies. Place toppings in 'sections' of the stadium.
  5. Garnish with cilantro and lime wedges. Serve immediately.
