Ingredients:
- 1.5 lbs boneless, skinless chicken breasts or flank steak
- 2 tbsp olive oil
- 1 packet fajita seasoning
- 1 large onion, sliced
- 2 bell peppers (different colors), sliced
- 20 small flour tortillas (6-inch diameter)
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup guacamole
- 1 cup pico de gallo
- 1 bunch cilantro, chopped
- 1 lime, cut into wedges
Instructions:
- Marinate chicken/steak and cook until done.
- Sauté onions and peppers until tender-crisp.
- Warm tortillas in a dry skillet or microwave.
- Arrange tortillas around the perimeter of serving platter, fill with protein and veggies. Place toppings in 'sections' of the stadium.
- Garnish with cilantro and lime wedges. Serve immediately.
