Ingredients:

  • 1 cup (225g) full fat cottage cheese
  • 1 large egg
  • 1/4 cup (30g) all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp dried Italian seasoning
  • 1/2 tsp onion powder
  • 1/4 tsp sea salt
  • 1/4 cup (28g) low-moisture shredded mozzarella
  • 2 tbsp (30g) marinara sauce

Instructions:

  1. Combine 1 cup cottage cheese, 1 large egg, 1 tsp garlic powder, 1 tsp dried Italian seasoning, 1/2 tsp onion powder, and 1/4 tsp sea salt in a blender.
  2. Pulse in 1/4 cup all purpose flour until just combined.
  3. Cut a piece of parchment paper to fit your air fryer, leaving a 1 inch gap around the edges for airflow.
  4. Pour the mixture onto the paper and spread into a 7 inch circle until even and smooth.
  5. Air fry at 375°F (190°C) for 8 minutes until the top is set and matte.
  6. Flip the crust over and remove the parchment paper.
  7. Air fry for another 2 minutes until the bottom is golden brown.
  8. Spread 2 tbsp marinara sauce and sprinkle 1/4 cup low moisture shredded mozzarella on top.
  9. Air fry at 375°F (190°C) for 2 minutes until the cheese is bubbly and sizzles.
  10. Let it sit for 2 minutes before slicing until the structure firms up.
