- 1.5 lbs Yukon Gold potatoes, peeled and cut into 1-inch wedges
- 3 tbsp extra virgin olive oil
- 1 large lemon, juiced (approx. 3 tbsp)
- 4 cloves garlic, finely minced
- 1 tbsp dried oregano
- 1 tsp sea salt
- 1/2 tsp cracked black pepper
Instructions:
- Wash, peel, and cut the 1.5 lbs of Yukon Golds into uniform 1 inch wedges.
- In a large bowl, combine 3 tbsp olive oil, 3 tbsp lemon juice, 4 minced garlic cloves, 1 tbsp oregano, 1 tsp salt, and 1/2 tsp pepper.
- Add the potatoes to the bowl and toss vigorously until every surface is glossy and coated.
- Preheat the air fryer to 400°F (200°C). Arrange the potatoes in the air fryer basket in a single layer, ensuring they are not overcrowded to allow for proper air circulation.
- Air fry at 400°F for 10 minutes until the edges begin to turn pale gold.
- Remove the basket and give it a firm shake to flip the potatoes.
- Return to the air fryer for another 10 minutes until the skin is dark gold and crackling.
- Piercing a wedge with a fork should feel like cutting through soft butter.
- Let them sit in the basket for 2 minutes; this allows the exterior to firm up and become even crispier.
