Ingredients:

  • ½ cup (113g) creamy peanut butter
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract (5ml)
  • ½ teaspoon baking soda (2.5ml)
  • Optional: Coarse sea salt, for sprinkling

Instructions:

  1. Preheat air fryer to 350°F (175°C). Cut parchment paper to fit the air fryer basket or tray.
  2. In a mixing bowl, combine peanut butter, granulated sugar, and brown sugar. Mix well until smooth and creamy.
  3. Add egg and vanilla extract to the peanut butter mixture. Mix until well combined.
  4. Stir in the baking soda until evenly distributed.
  5. Scoop or spoon the cookie dough onto the prepared parchment paper, leaving space between each cookie.
  6. Gently flatten each cookie with a fork, creating a criss-cross pattern.
  7. Carefully place the parchment paper with the cookies into the preheated air fryer basket.
  8. Air fry for 6-8 minutes, or until the edges are golden brown and the centers are set. Check for doneness around 6 minutes; they cook quickly!
  9. Remove the cookies from the air fryer and let them cool on the parchment paper for a few minutes before transferring them to a wire rack to cool completely. Sprinkle with coarse sea salt (optional).
