Ingredients:
- ½ cup (113g) creamy peanut butter
- ½ cup (100g) granulated sugar
- ½ cup (100g) packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract (5ml)
- ½ teaspoon baking soda (2.5ml)
- Optional: Coarse sea salt, for sprinkling
Instructions:
- Preheat air fryer to 350°F (175°C). Cut parchment paper to fit the air fryer basket or tray.
- In a mixing bowl, combine peanut butter, granulated sugar, and brown sugar. Mix well until smooth and creamy.
- Add egg and vanilla extract to the peanut butter mixture. Mix until well combined.
- Stir in the baking soda until evenly distributed.
- Scoop or spoon the cookie dough onto the prepared parchment paper, leaving space between each cookie.
- Gently flatten each cookie with a fork, creating a criss-cross pattern.
- Carefully place the parchment paper with the cookies into the preheated air fryer basket.
- Air fry for 6-8 minutes, or until the edges are golden brown and the centers are set. Check for doneness around 6 minutes; they cook quickly!
- Remove the cookies from the air fryer and let them cool on the parchment paper for a few minutes before transferring them to a wire rack to cool completely. Sprinkle with coarse sea salt (optional).
