Ingredients:

  • 2 lbs (900g) Yukon Gold or Russet potatoes, cut into 1-1.5 inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions:

  1. Wash and cut the potatoes into uniform pieces to ensure even cooking.
  2. In a large bowl, toss the potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Make sure they're evenly coated.
  3. Preheat the air fryer (if your model requires it). Arrange the potatoes in a single layer in the air fryer basket, being careful not to overcrowd. You may need to cook in batches.
  4. Air fry at 400°F (200°C) for 25-30 minutes, flipping halfway through, until golden brown and crispy on the outside and tender on the inside.
  5. Taste and adjust seasoning with additional salt and pepper, if needed. Garnish with fresh parsley (if desired) and serve immediately.
