Ingredients:
- 175g unsalted butter, softened
- 175g dark brown soft sugar, plus 1 tablespoon for sprinkling
- 3 medium eggs
- 175g self-raising flour
- 1 teaspoon ground cinnamon
- 2 tablespoons milk
- 1 large Bramley apple (or 2 small dessert apples), peeled, cored, and diced/sliced
Instructions:
- Preheat oven to 180°C (350°F/ Gas Mark 4). Grease and line cake tin.
- Cream together softened butter and sugar until pale and fluffy.
- Beat in eggs one at a time, ensuring each is fully incorporated before adding the next.
- Gently fold in flour and cinnamon until just combined. Avoid overmixing.
- Stir in milk until the batter is smooth.
- Peel, core, and dice half the apple into small pieces. Slice the other half into thin segments.
- Gently fold the diced apple into the cake batter.
- Pour batter into the prepared tin. Arrange apple slices on top and sprinkle with remaining brown sugar.
- Bake for 25 minutes, or until a skewer inserted into the center comes out clean.
- Let cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
