Ingredients:

  • 175g unsalted butter, softened
  • 175g dark brown soft sugar, plus 1 tablespoon for sprinkling
  • 3 medium eggs
  • 175g self-raising flour
  • 1 teaspoon ground cinnamon
  • 2 tablespoons milk
  • 1 large Bramley apple (or 2 small dessert apples), peeled, cored, and diced/sliced

Instructions:

  1. Preheat oven to 180°C (350°F/ Gas Mark 4). Grease and line cake tin.
  2. Cream together softened butter and sugar until pale and fluffy.
  3. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next.
  4. Gently fold in flour and cinnamon until just combined. Avoid overmixing.
  5. Stir in milk until the batter is smooth.
  6. Peel, core, and dice half the apple into small pieces. Slice the other half into thin segments.
  7. Gently fold the diced apple into the cake batter.
  8. Pour batter into the prepared tin. Arrange apple slices on top and sprinkle with remaining brown sugar.
  9. Bake for 25 minutes, or until a skewer inserted into the center comes out clean.
  10. Let cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
