Ingredients:
- 1.5 lbs English cucumbers
- 1 tsp Kosher salt
- 2 tbsp toasted sesame seeds
- 2 stalks fresh scallions, thinly sliced
- 3 tbsp rice wine vinegar
- 2 tbsp soy sauce
- 1 tbsp toasted sesame oil
- 1 tbsp honey
- 1 tsp freshly grated ginger
- 2 cloves garlic, minced
- 1 tsp red pepper flakes
Instructions:
- Place the cucumbers on a cutting board. Using a cleaver or rolling pin, gently smash the cucumbers by pressing down firmly until they crack open. Slice them into bite-sized, irregular chunks.
- Toss the cucumber chunks with 1 tsp of salt in a colander and let them sit for 15 minutes. Rinse briefly under cold water and pat dry with a paper towel.
- In a small jar, combine the rice wine vinegar, soy sauce, toasted sesame oil, honey, ginger, garlic, and red pepper flakes. Shake vigorously for 30 seconds or whisk until glossy and uniform.
- Place the dried cucumbers in a large bowl, pour the dressing over the top, and toss gently. Fold in the sliced scallions and toasted sesame seeds just before serving.
