Ingredients:

  • 1.5 lbs English cucumbers
  • 1 tsp Kosher salt
  • 2 tbsp toasted sesame seeds
  • 2 stalks fresh scallions, thinly sliced
  • 3 tbsp rice wine vinegar
  • 2 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp honey
  • 1 tsp freshly grated ginger
  • 2 cloves garlic, minced
  • 1 tsp red pepper flakes

Instructions:

  1. Place the cucumbers on a cutting board. Using a cleaver or rolling pin, gently smash the cucumbers by pressing down firmly until they crack open. Slice them into bite-sized, irregular chunks.
  2. Toss the cucumber chunks with 1 tsp of salt in a colander and let them sit for 15 minutes. Rinse briefly under cold water and pat dry with a paper towel.
  3. In a small jar, combine the rice wine vinegar, soy sauce, toasted sesame oil, honey, ginger, garlic, and red pepper flakes. Shake vigorously for 30 seconds or whisk until glossy and uniform.
  4. Place the dried cucumbers in a large bowl, pour the dressing over the top, and toss gently. Fold in the sliced scallions and toasted sesame seeds just before serving.
