Ingredients:
- 1 lb English cucumber
- 1 tsp Kosher salt
- 2 tbsp Rice vinegar
- 1 tbsp Soy sauce
- 1 tbsp Toasted sesame oil
- 1 tsp Granulated sugar
- 1 clove Garlic, minced
- 1/2 tsp Fresh ginger, grated
- 1 tbsp Toasted sesame seeds
- 2 stalks Green onions, sliced
Instructions:
- Place the cucumbers on a cutting board. Using a rolling pin or the flat side of a cleaver, gently press down on the cucumber until it cracks open.
- Slice the smashed cucumbers into bite-sized, irregular chunks.
- Toss the cucumber chunks with 1 tsp of salt in a colander and let them sit for 5-10 minutes. Rinse quickly under cold water and pat dry.
- In a small bowl, whisk together the rice vinegar, soy sauce, toasted sesame oil, and sugar.
- Stir in the minced garlic and grated ginger, whisking until the sugar has completely dissolved.
- Place the dried cucumbers into a large bowl and pour the dressing over the top.
- Add the toasted sesame seeds and sliced green onions, then toss gently to coat.
