Ingredients:

  • 1 lb English cucumber
  • 1 tsp Kosher salt
  • 2 tbsp Rice vinegar
  • 1 tbsp Soy sauce
  • 1 tbsp Toasted sesame oil
  • 1 tsp Granulated sugar
  • 1 clove Garlic, minced
  • 1/2 tsp Fresh ginger, grated
  • 1 tbsp Toasted sesame seeds
  • 2 stalks Green onions, sliced

Instructions:

  1. Place the cucumbers on a cutting board. Using a rolling pin or the flat side of a cleaver, gently press down on the cucumber until it cracks open.
  2. Slice the smashed cucumbers into bite-sized, irregular chunks.
  3. Toss the cucumber chunks with 1 tsp of salt in a colander and let them sit for 5-10 minutes. Rinse quickly under cold water and pat dry.
  4. In a small bowl, whisk together the rice vinegar, soy sauce, toasted sesame oil, and sugar.
  5. Stir in the minced garlic and grated ginger, whisking until the sugar has completely dissolved.
  6. Place the dried cucumbers into a large bowl and pour the dressing over the top.
  7. Add the toasted sesame seeds and sliced green onions, then toss gently to coat.
