Ingredients:
- 5 tablespoons (70g) Unsalted Butter
- 10 ounces (283g) Mini Marshmallows (plus 2 cups [113g] reserved for later)
- ½ teaspoon Vanilla Extract
- 6 cups (170g) Rice Krispies Cereal
Instructions:
- Generously butter a 9x13 inch baking pan. You can also line it with parchment paper for easy removal.
- In a large saucepan over low heat, melt the butter.
- Add 10 ounces of mini marshmallows to the melted butter and stir constantly until completely melted.
- Stir in the vanilla extract.
- Take the saucepan off the heat.
- Quickly stir in the Rice Krispies cereal and the reserved 2 cups of mini marshmallows until evenly coated. This is where the magic happens – those unmelted marshmallows create pockets of gooey goodness!
- Gently press the mixture into the prepared baking pan. Don’t compress it too much; you want to keep some air in there for that perfect gooey texture.
- Let cool completely (about 30 minutes) before cutting into squares.
