Ingredients:

  • 5 tablespoons (70g) Unsalted Butter
  • 10 ounces (283g) Mini Marshmallows (plus 2 cups [113g] reserved for later)
  • ½ teaspoon Vanilla Extract
  • 6 cups (170g) Rice Krispies Cereal

Instructions:

  1. Generously butter a 9x13 inch baking pan. You can also line it with parchment paper for easy removal.
  2. In a large saucepan over low heat, melt the butter.
  3. Add 10 ounces of mini marshmallows to the melted butter and stir constantly until completely melted.
  4. Stir in the vanilla extract.
  5. Take the saucepan off the heat.
  6. Quickly stir in the Rice Krispies cereal and the reserved 2 cups of mini marshmallows until evenly coated. This is where the magic happens – those unmelted marshmallows create pockets of gooey goodness!
  7. Gently press the mixture into the prepared baking pan. Don’t compress it too much; you want to keep some air in there for that perfect gooey texture.
  8. Let cool completely (about 30 minutes) before cutting into squares.
