Ingredients:

  • 2 ripe avocados
  • 4 large eggs
  • 1 tablespoon milk or cream (whole milk preferred)
  • 1 tablespoon unsalted butter
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon chopped fresh chives or parsley (Optional)
  • Pinch of red pepper flakes (Optional)
  • Hot sauce of your choice (Tabasco is classic!) (Optional)
  • Everything Bagel Seasoning (Optional)
  • Crispy Bacon Crumbles (approx. 2 strips cooked and crumbled) (Optional)

Instructions:

  1. Halve the avocados lengthwise and remove the pits. If the avocado halves are too small to comfortably hold the eggs, scoop out a little bit of the avocado flesh from the center to create a larger well.
  2. In a small bowl, whisk together the eggs, milk/cream, salt, and pepper until light and frothy.
  3. Melt the butter in the non-stick skillet over medium-low heat. Pour in the egg mixture. Cook, stirring gently with a spatula, until the eggs are softly set but still slightly moist. Avoid overcooking!
  4. Spoon the scrambled eggs into the avocado halves, dividing evenly.
  5. Garnish with your choice of toppings (chives, red pepper flakes, hot sauce, Everything Bagel Seasoning, bacon crumbles). Serve immediately.
