Ingredients:
- 2 ripe avocados
- 4 large eggs
- 1 tablespoon milk or cream (whole milk preferred)
- 1 tablespoon unsalted butter
- Salt and freshly ground black pepper, to taste
- 1 tablespoon chopped fresh chives or parsley (Optional)
- Pinch of red pepper flakes (Optional)
- Hot sauce of your choice (Tabasco is classic!) (Optional)
- Everything Bagel Seasoning (Optional)
- Crispy Bacon Crumbles (approx. 2 strips cooked and crumbled) (Optional)
Instructions:
- Halve the avocados lengthwise and remove the pits. If the avocado halves are too small to comfortably hold the eggs, scoop out a little bit of the avocado flesh from the center to create a larger well.
- In a small bowl, whisk together the eggs, milk/cream, salt, and pepper until light and frothy.
- Melt the butter in the non-stick skillet over medium-low heat. Pour in the egg mixture. Cook, stirring gently with a spatula, until the eggs are softly set but still slightly moist. Avoid overcooking!
- Spoon the scrambled eggs into the avocado halves, dividing evenly.
- Garnish with your choice of toppings (chives, red pepper flakes, hot sauce, Everything Bagel Seasoning, bacon crumbles). Serve immediately.
