Ingredients:

  • 1 ½ cups (180 g) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp salt
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • ¼ cup (60 ml) vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 cup (240 ml) unsweetened applesauce
  • 1 tsp vanilla extract
  • ½ cup (50 g) chopped walnuts or pecans (optional)
  • 2 tbsp (30 g) powdered sugar for dusting (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour your baking dish.
  2. In a bowl, whisk together flour, baking soda, baking powder, spices, and salt until combined.
  3. In a separate large bowl, mix granulated sugar, brown sugar, and oil until fluffy.
  4. Beat in the eggs one at a time, followed by applesauce and vanilla until smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
  6. Carefully fold in walnuts or pecans if using.
  7. Pour batter into the prepared dish and smooth the top. Bake for 30-35 minutes.
  8. Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
