Ingredients:
- 1 ½ cups (180 g) all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground cloves
- ¼ tsp salt
- ½ cup (100 g) granulated sugar
- ½ cup (100 g) packed brown sugar
- ¼ cup (60 ml) vegetable oil or melted coconut oil
- 2 large eggs
- 1 cup (240 ml) unsweetened applesauce
- 1 tsp vanilla extract
- ½ cup (50 g) chopped walnuts or pecans (optional)
- 2 tbsp (30 g) powdered sugar for dusting (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour your baking dish.
- In a bowl, whisk together flour, baking soda, baking powder, spices, and salt until combined.
- In a separate large bowl, mix granulated sugar, brown sugar, and oil until fluffy.
- Beat in the eggs one at a time, followed by applesauce and vanilla until smooth.
- Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.
- Carefully fold in walnuts or pecans if using.
- Pour batter into the prepared dish and smooth the top. Bake for 30-35 minutes.
- Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
