Ingredients:
- 1 cup (125g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ⅓ cup (75g) unsalted butter, cold and cubed
- 3-4 tablespoons cold water
- 2 cups (300g) cooked chicken, shredded
- ½ cup (120ml) Buffalo sauce (adjust for heat preference)
- ½ cup (50g) shredded cheddar cheese
- ¼ cup (25g) cream cheese, softened
- Salt and pepper to taste
Instructions:
- In a mixing bowl, combine flour, baking powder, and salt.
- Cut in cold butter until mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms.
- Chill the dough in the refrigerator for 10 minutes.
- In another bowl, mix shredded chicken, Buffalo sauce, cheddar cheese, and cream cheese. Season with salt and pepper.
- Preheat the oven to 400°F (200°C). Roll out dough on a floured surface to about ¼-inch thickness.
- Cut into squares approximately 5x5 inches.
- Spoon filling onto one side of each square, leaving a border.
- Fold dough over filling, sealing edges with a fork.
- Place on a baking sheet lined with parchment paper.
- Brush tops with butter if desired. Bake for 18-20 minutes or until golden brown.
- Allow to cool for a few minutes, then serve warm.
