Ingredients:

  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ⅓ cup (75g) unsalted butter, cold and cubed
  • 3-4 tablespoons cold water
  • 2 cups (300g) cooked chicken, shredded
  • ½ cup (120ml) Buffalo sauce (adjust for heat preference)
  • ½ cup (50g) shredded cheddar cheese
  • ¼ cup (25g) cream cheese, softened
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine flour, baking powder, and salt.
  2. Cut in cold butter until mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a dough forms.
  4. Chill the dough in the refrigerator for 10 minutes.
  5. In another bowl, mix shredded chicken, Buffalo sauce, cheddar cheese, and cream cheese. Season with salt and pepper.
  6. Preheat the oven to 400°F (200°C). Roll out dough on a floured surface to about ¼-inch thickness.
  7. Cut into squares approximately 5x5 inches.
  8. Spoon filling onto one side of each square, leaving a border.
  9. Fold dough over filling, sealing edges with a fork.
  10. Place on a baking sheet lined with parchment paper.
  11. Brush tops with butter if desired. Bake for 18-20 minutes or until golden brown.
  12. Allow to cool for a few minutes, then serve warm.
