Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup unsalted butter, cold and cubed
  • 6 tablespoons ice water
  • 1 cup cooked chicken, shredded
  • ¼ cup buffalo sauce
  • ¼ cup cream cheese, softened
  • ½ cup shredded cheddar cheese
  • 1 tablespoon ranch dressing or blue cheese dressing (optional)

Instructions:

  1. In a mixing bowl, combine flour, salt, and baking powder.
  2. Add cold, cubed butter; cut into flour until mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until a dough forms.
  4. Press into a disk, wrap in plastic, and chill for 10 minutes.
  5. In a large bowl, mix shredded chicken, buffalo sauce, cream cheese, cheddar cheese, and ranch dressing until well incorporated.
  6. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  7. Roll chilled dough onto a floured surface to about ¼ inch thickness.
  8. Cut dough into rectangles (about 4 inches by 6 inches).
  9. Place a spoonful of filling in the center of each rectangle.
  10. Fold dough over filling, sealing edges with a fork.
  11. Brush tops with melted butter if desired.
  12. Bake for 15-20 minutes or until golden brown.
  13. Allow to cool slightly before serving. Enjoy warm!
