Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup breadcrumbs (panko recommended for extra crunch)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons milk
  • 1/2 cup plain Greek yogurt or sour cream (optional)
  • 2 tablespoons fresh lemon juice (optional)
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and pepper to taste (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the baking sheet by lining it with parchment paper or greasing it lightly.
  3. In a mixing bowl, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  4. In another shallow bowl, whisk together the egg and milk until well combined.
  5. Dip each chicken piece into the egg mixture, allowing excess to drip off.
  6. Coat the chicken in the breadcrumb mixture thoroughly, pressing gently to adhere.
  7. Place coated chicken bites on the prepared baking sheet, ensuring they are spaced evenly.
  8. Bake in the preheated oven for 20-25 minutes or until golden brown and the internal temperature reaches 165°F (74°C).
  9. While baking, prepare the dipping sauce by mixing Greek yogurt, lemon juice, honey, salt, and pepper in a small bowl.
  10. Serve hot with dipping sauce on the side.
