Ingredients:

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 4 oz thinly sliced ham
  • 4 oz Swiss cheese, sliced or shredded
  • 1/2 cup marinara sauce (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, milk, chopped onion, egg, garlic powder, dried thyme, salt, and pepper.
  3. Mix until just combined; avoid overmixing.
  4. Spread half of the meat mixture evenly in the loaf pan.
  5. Layer with ham slices and cheese, leaving a small border around the edges.
  6. Top with the remaining meat mixture, sealing the edges well.
  7. Optionally, spread marinara sauce on top.
  8. Bake for 45 minutes or until the internal temperature reaches 165°F (74°C) and the meatloaf is golden brown.
  9. Allow to rest for 10 minutes before slicing.
  10. Garnish with fresh parsley and serve.
