Ingredients:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup finely chopped onion
- 1 large egg
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 oz thinly sliced ham
- 4 oz Swiss cheese, sliced or shredded
- 1/2 cup marinara sauce (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine ground chicken, breadcrumbs, milk, chopped onion, egg, garlic powder, dried thyme, salt, and pepper.
- Mix until just combined; avoid overmixing.
- Spread half of the meat mixture evenly in the loaf pan.
- Layer with ham slices and cheese, leaving a small border around the edges.
- Top with the remaining meat mixture, sealing the edges well.
- Optionally, spread marinara sauce on top.
- Bake for 45 minutes or until the internal temperature reaches 165°F (74°C) and the meatloaf is golden brown.
- Allow to rest for 10 minutes before slicing.
- Garnish with fresh parsley and serve.
