- 1 tablespoon (15ml) olive oil
- 3/4 cup (180ml) warm water
- 1/2 cup (120g) cranberry sauce
- 1 cup (150g) roasted mixed vegetables
- 4 oz (113g) goat cheese, crumbled
- 1 teaspoon (5g) fresh rosemary, chopped
- 1/2 teaspoon (2g) black pepper
- Optional: a handful of fresh arugula for garnish
Instructions:
- In a mixing bowl, combine flour, yeast, and salt.
- Add olive oil and warm water; stir until a dough forms.
- Knead the dough for about 5 minutes until smooth; let rise for 20 minutes.
- While the dough is rising, preheat your oven to 475°F (245°C).
- Roll out the risen dough on a floured surface to your desired thickness.
- Transfer the rolled dough onto a baking sheet lined with parchment paper.
- Spread an even layer of cranberry sauce over the dough.
- Top with roasted mixed vegetables and crumbled goat cheese.
- Sprinkle fresh rosemary and black pepper on top.
- Place the pizza in the preheated oven.
- Bake for 15-20 minutes or until the crust is golden and the cheese is bubbly.
- Remove the pizza from the oven and let it cool for a few minutes.
- Optionally, garnish with fresh arugula before slicing and serving.
