Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 teaspoon (5g) instant yeast
  • 1 teaspoon (5g) salt
  • 1 tablespoon (15ml) olive oil
  • 3/4 cup (180ml) warm water
  • 1/2 cup (120g) cranberry sauce
  • 1 cup (150g) roasted mixed vegetables
  • 4 oz (113g) goat cheese, crumbled
  • 1 teaspoon (5g) fresh rosemary, chopped
  • 1/2 teaspoon (2g) black pepper
  • Optional: a handful of fresh arugula for garnish

Instructions:

  1. In a mixing bowl, combine flour, yeast, and salt.
  2. Add olive oil and warm water; stir until a dough forms.
  3. Knead the dough for about 5 minutes until smooth; let rise for 20 minutes.
  4. While the dough is rising, preheat your oven to 475°F (245°C).
  5. Roll out the risen dough on a floured surface to your desired thickness.
  6. Transfer the rolled dough onto a baking sheet lined with parchment paper.
  7. Spread an even layer of cranberry sauce over the dough.
  8. Top with roasted mixed vegetables and crumbled goat cheese.
  9. Sprinkle fresh rosemary and black pepper on top.
  10. Place the pizza in the preheated oven.
  11. Bake for 15-20 minutes or until the crust is golden and the cheese is bubbly.
  12. Remove the pizza from the oven and let it cool for a few minutes.
  13. Optionally, garnish with fresh arugula before slicing and serving.
