Ingredients:

  • 1 cup (225g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (130g) all-purpose flour
  • 1 cup (90g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (250g) mincemeat filling (store-bought or homemade)
  • Zest of 1 orange
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease the baking pan or line with parchment paper.
  2. In a mixing bowl, combine melted butter and sugar; whisk until well incorporated.
  3. Add eggs, one at a time, mixing thoroughly after each addition. Stir in vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
  6. In a small bowl, mix mincemeat, orange zest, cinnamon, nutmeg, and ginger until well combined.
  7. Pour half of the brownie batter into the prepared pan and spread evenly.
  8. Spoon the mincemeat mixture over the brownie base, spreading it to cover evenly.
  9. Pour the remaining brownie batter on top and gently swirl with a knife for a marbled effect.
  10. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  11. Allow to cool in the pan before cutting into squares and serving.
