Ingredients:
- 1 cup (225g) unsalted butter, melted
- 2 cups (400g) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup (130g) all-purpose flour
- 1 cup (90g) unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup (250g) mincemeat filling (store-bought or homemade)
- Zest of 1 orange
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
Instructions:
- Preheat the oven to 350°F (175°C). Grease the baking pan or line with parchment paper.
- In a mixing bowl, combine melted butter and sugar; whisk until well incorporated.
- Add eggs, one at a time, mixing thoroughly after each addition. Stir in vanilla extract.
- In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
- Gradually fold dry ingredients into the wet mixture until just combined.
- In a small bowl, mix mincemeat, orange zest, cinnamon, nutmeg, and ginger until well combined.
- Pour half of the brownie batter into the prepared pan and spread evenly.
- Spoon the mincemeat mixture over the brownie base, spreading it to cover evenly.
- Pour the remaining brownie batter on top and gently swirl with a knife for a marbled effect.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow to cool in the pan before cutting into squares and serving.
