Ingredients:

  • 1 ½ cups (180g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • ¼ tsp nutmeg
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (120ml) buttermilk or milk
  • 2 cups mixed fresh fruits (diced apples, berries, citrus)
  • ½ cup (60g) confectioners
  • sugar
  • Zest of 1 lemon
  • Fresh fruit slices for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the cake pan and line the bottom with parchment paper.
  3. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a separate bowl, cream softened butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time, then stir in vanilla extract.
  6. Alternate adding the dry ingredient mixture and buttermilk to the wet mixture until just combined.
  7. Gently fold in the mixed fresh fruits.
  8. Pour the batter into prepared cake pan, smoothing the top.
  9. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  11. Optional: Dust with confectioners sugar and garnish with fresh fruit slices before serving.
