Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- 1 cup dried cranberries, roughly chopped
- ½ cup white chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt. Set aside.
- In a separate bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Beat in the egg, orange zest, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Gently fold in the chopped cranberries and white chocolate chips (if using).
- Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, leaving space between each cookie.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
- Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
