Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries, roughly chopped
  • ½ cup white chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a separate bowl, cream the softened butter and granulated sugar together until light and fluffy.
  4. Beat in the egg, orange zest, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the chopped cranberries and white chocolate chips (if using).
  7. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, leaving space between each cookie.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
  9. Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
