Ingredients:
- 1 pound (450g) ground beef or turkey
- 1 packet (1 oz / 28g) taco seasoning mix
- 1 cup (240ml) salsa
- 9-12 corn tortillas (depending on size)
- 2 cups (240g) shredded cheese (cheddar or Mexican blend)
- 1 can (15 oz / 425g) black beans, drained and rinsed
- 1 cup (150g) corn kernels (fresh, frozen, or canned)
- ½ cup (120ml) sour cream
- 1 green onion, chopped (for garnish)
- Fresh cilantro, chopped (optional for garnish)
Instructions:
- Preheat the oven to 375°F (190°C).
- In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat. Add taco seasoning and salsa, stir well, and simmer for 5 minutes.
- Spread a thin layer of meat mixture on the bottom of the baking dish. Layer 3 corn tortillas over the meat. Spread half of the remaining meat mixture over tortillas. Sprinkle half of the cheese on top.
- Add another layer of tortillas, then the remaining meat mixture, corn, and black beans. Top with the remaining tortillas and cheese.
- Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
- Remove from the oven, let cool slightly. Garnish with sour cream, green onions, and cilantro.
