Ingredients:

  • 1 pound (450g) ground beef or turkey
  • 1 packet (1 oz / 28g) taco seasoning mix
  • 1 cup (240ml) salsa
  • 9-12 corn tortillas (depending on size)
  • 2 cups (240g) shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 cup (150g) corn kernels (fresh, frozen, or canned)
  • ½ cup (120ml) sour cream
  • 1 green onion, chopped (for garnish)
  • Fresh cilantro, chopped (optional for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat. Add taco seasoning and salsa, stir well, and simmer for 5 minutes.
  3. Spread a thin layer of meat mixture on the bottom of the baking dish. Layer 3 corn tortillas over the meat. Spread half of the remaining meat mixture over tortillas. Sprinkle half of the cheese on top.
  4. Add another layer of tortillas, then the remaining meat mixture, corn, and black beans. Top with the remaining tortillas and cheese.
  5. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
  6. Remove from the oven, let cool slightly. Garnish with sour cream, green onions, and cilantro.
