Ingredients:

  • 4 medium sweet potatoes (roughly 225-280g each)
  • 1 tbsp avocado or grapeseed oil
  • 1 tsp coarse sea salt
  • 0.5 tsp cracked black pepper

Instructions:

  1. Preheat your oven to 400°F (204°C). Scrub the 4 sweet potatoes under cold water until all dirt is gone and pat them bone dry with a clean towel.
  2. Prick each potato 6 times with a fork until you feel the center. Drizzle 1 tbsp of avocado oil over the potatoes and massage the oil and 1 tsp salt into the skins until they look glossy.
  3. Place potatoes on the wire rack over a baking sheet.
  4. Roast 50 minutes until the skin is puffed and slightly charred. Check for doneness by squeezing with tongs; it should feel completely soft and yielding.
  5. Remove and let rest for 5 minutes until the steam settles inside.
