Ingredients:
- 3 large overripe bananas (375g)
- 0.5 cup natural peanut butter (125g)
- 2 cups old fashioned rolled oats (180g)
- 2 tablespoons ground flaxseed meal (14g)
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 0.25 teaspoon sea salt
- 0.33 cup dark chocolate chips (50g)
Instructions:
- Preheat your oven to 350°F (175°C) and line an 8x8 inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large mixing bowl, mash the overripe bananas using a fork or potato masher until they reach a liquid consistency with minimal lumps.
- Whisk the natural peanut butter, vanilla extract, and cinnamon into the banana mash until the mixture forms a uniform, mahogany-colored paste.
- Fold in the old fashioned rolled oats, ground flaxseed meal, and sea salt. Stir thoroughly until every oat is coated in the wet mixture.
- Gently fold in the dark chocolate chips until evenly distributed throughout the thick, sticky dough.
- Transfer the mixture to the prepared baking pan. Use the back of a spoon to press the dough firmly into the corners and level the top.
- Bake for 20 minutes until the edges are golden brown and the center is firm to the touch. Allow to cool completely before slicing into 12 bars.
