Ingredients:

  • 150 g blue masa harina
  • Pinch of salt
  • 300 ml lukewarm water

Instructions:

  1. Place masa harina in a large mixing bowl; add salt and stir to combine.
  2. Gradually add lukewarm water, mixing after each addition until a firm dough forms that just comes together.
  3. Knead the dough on a floured surface for about 5 minutes until elastic.
  4. Divide the dough into 16 equal pieces (~30g each), cover with a clean towel to prevent drying.
  5. Heat a non-stick frying pan over medium heat for 1 minute.
  6. Press out each dough ball into a 12cm (5-inch) tortilla using a tortilla press or heavy oven dish, between lightly greased plastic sheets.
  7. Carefully peel off the plastic and place the tortilla in the hot pan. Cook for 15 seconds, flip, and continue for 15 seconds on the other side.
  8. Repeat with remaining dough, keeping finished tortillas warm in a covered dish or between towels.
