Ingredients:
- ½ cup (120 ml) Mild, light-coloured Honey
- ½ cup (120 ml) Hot Filtered Water
- 2 fl oz (60 ml) Quality London Dry Gin
- ¾ fl oz (22.5 ml) Freshly Squeezed Lemon Juice
- ¾ fl oz (22.5 ml) Honey Syrup (Chilled)
- Lemon Twist or Wheel, for garnish
- Ice Cubes, as needed
Instructions:
- Prepare the Honey Syrup: In a small saucepan, combine the honey and the hot water.
- Dissolve: Place over low heat, stirring continuously until the honey is completely dissolved into the water. Do not allow it to boil vigorously.
- Cool Down: Remove from heat, pour the syrup into a clean container, and refrigerate for at least 30 minutes until thoroughly chilled.
- Prep Glassware: Place a coupe or Nick & Nora glass in the freezer to chill.
- Measure Liquids: Measure the chilled Gin, the fresh Lemon Juice, and the chilled Honey Syrup directly into the cocktail shaker tin.
- Add Ice: Fill the shaker 2/3 full with high-quality ice cubes.
- Seal and Shake: Ensure the shaker is tightly sealed. Shake vigorously (a proper hard shake) for about 15 to 20 seconds until the exterior is heavily frosted.
- Double Strain: Remove the chilled glass. Hold a fine-mesh sieve over the glass and pour the cocktail through both the shaker's strainer and the sieve to ensure a silky-smooth texture.
- Garnish and Serve: Express the oils from the lemon twist over the surface of the drink by twisting the rind, then garnish with the twist or wheel and serve immediately.
