Ingredients:

  • 1 1/2 cups (150g) rolled oats (old-fashioned oats)
  • 1/2 cup (50g) chopped nuts (almonds, pecans, or walnuts)
  • 1/4 cup (30g) seeds (pumpkin, sunflower, or flax)
  • 1/4 cup (60 ml) maple syrup or honey
  • 2 tablespoons (30ml) coconut oil, melted
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 1 cup (225g) plain Greek yogurt (full-fat or low-fat)
  • 1 teaspoon vanilla extract
  • 2 tablespoons (30ml) maple syrup or honey (optional, for added sweetness)
  • 1 cup (approximately 120g) mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 2 tablespoons chopped fresh mint (for garnish, optional)

Instructions:

  1. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. Combine oats, nuts, and seeds in a large bowl.
  3. In a separate bowl, whisk together maple syrup (or honey), melted coconut oil, cinnamon, and salt.
  4. Pour the wet ingredients over the dry ingredients and mix well to coat.
  5. Spread the granola evenly on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until golden brown, stirring halfway through.
  7. Let cool completely before breaking into clusters.
  8. In a medium bowl, combine the Greek yogurt, vanilla extract, and maple syrup (or honey, if using). Stir until smooth.
  9. In each glass or jar, layer granola (or a store bought version!), yogurt, and berries.
  10. Repeat layers until the glass is full.
  11. Top with a final layer of berries and a sprinkle of chopped fresh mint (if using). Serve immediately, or chill for later.
