Ingredients:
- 1 1/2 cups (150g) rolled oats (old-fashioned oats)
- 1/2 cup (50g) chopped nuts (almonds, pecans, or walnuts)
- 1/4 cup (30g) seeds (pumpkin, sunflower, or flax)
- 1/4 cup (60 ml) maple syrup or honey
- 2 tablespoons (30ml) coconut oil, melted
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- 1 cup (225g) plain Greek yogurt (full-fat or low-fat)
- 1 teaspoon vanilla extract
- 2 tablespoons (30ml) maple syrup or honey (optional, for added sweetness)
- 1 cup (approximately 120g) mixed berries (strawberries, blueberries, raspberries, blackberries)
- 2 tablespoons chopped fresh mint (for garnish, optional)
Instructions:
- Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
- Combine oats, nuts, and seeds in a large bowl.
- In a separate bowl, whisk together maple syrup (or honey), melted coconut oil, cinnamon, and salt.
- Pour the wet ingredients over the dry ingredients and mix well to coat.
- Spread the granola evenly on the prepared baking sheet.
- Bake for 20-25 minutes, or until golden brown, stirring halfway through.
- Let cool completely before breaking into clusters.
- In a medium bowl, combine the Greek yogurt, vanilla extract, and maple syrup (or honey, if using). Stir until smooth.
- In each glass or jar, layer granola (or a store bought version!), yogurt, and berries.
- Repeat layers until the glass is full.
- Top with a final layer of berries and a sprinkle of chopped fresh mint (if using). Serve immediately, or chill for later.
