Ingredients:

  • 3 large Ripe Avocados (Hass variety recommended)
  • 3 tablespoons Fresh Lime Juice
  • 1/4 cup finely diced Red Onion
  • 1 small finely minced Jalapeño Pepper (seeds removed for less heat)
  • 1/4 cup packed Fresh Cilantro, chopped
  • 1 small Roma Tomato, seeds and pulp removed, diced
  • 1/2 teaspoon Kosher Salt (or to taste)
  • Pinch of Freshly Ground Black Pepper

Instructions:

  1. Finely dice the onion and jalapeño. Remove the seeds and pulp from the tomato, then dice finely. Roughly chop the cilantro. Set aside.
  2. Halve the avocados, remove the pits, and scoop the flesh directly into a medium-sized mixing bowl.
  3. Immediately drizzle the fresh lime juice over the avocado. Using a fork or masher, gently mash the avocado to your preferred consistency—chunky is recommended.
  4. Sprinkle in the salt and pepper. Fold in the prepared onion, jalapeño, cilantro, and diced tomato until just combined.
  5. Taste a small spoonful and adjust seasoning. Add more salt, lime juice, or spice as needed to achieve your perfect balance.
  6. For best results, cover the surface directly with plastic wrap and let the guacamole rest at room temperature for 10-15 minutes for the flavours to meld.
  7. Transfer to a serving bowl, garnish optionally, and serve immediately with high-quality tortilla chips or fresh vegetable sticks.
