Ingredients:
- 3 large Ripe Avocados (Hass variety recommended)
- 3 tablespoons Fresh Lime Juice
- 1/4 cup finely diced Red Onion
- 1 small finely minced Jalapeño Pepper (seeds removed for less heat)
- 1/4 cup packed Fresh Cilantro, chopped
- 1 small Roma Tomato, seeds and pulp removed, diced
- 1/2 teaspoon Kosher Salt (or to taste)
- Pinch of Freshly Ground Black Pepper
Instructions:
- Finely dice the onion and jalapeño. Remove the seeds and pulp from the tomato, then dice finely. Roughly chop the cilantro. Set aside.
- Halve the avocados, remove the pits, and scoop the flesh directly into a medium-sized mixing bowl.
- Immediately drizzle the fresh lime juice over the avocado. Using a fork or masher, gently mash the avocado to your preferred consistency—chunky is recommended.
- Sprinkle in the salt and pepper. Fold in the prepared onion, jalapeño, cilantro, and diced tomato until just combined.
- Taste a small spoonful and adjust seasoning. Add more salt, lime juice, or spice as needed to achieve your perfect balance.
- For best results, cover the surface directly with plastic wrap and let the guacamole rest at room temperature for 10-15 minutes for the flavours to meld.
- Transfer to a serving bowl, garnish optionally, and serve immediately with high-quality tortilla chips or fresh vegetable sticks.
