Ingredients:
- 1 lb Roma tomatoes, seeded and finely diced
- 1/2 cup white onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 2 tbsp fresh lime juice
- 1 medium jalapeño, seeds removed and minced
- 1 small garlic clove, minced
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
Instructions:
- Place diced tomatoes in a colander and sprinkle with a pinch of salt.
- Let them sit for 5–10 minutes until you see liquid pooling at the bottom.
- Dice the white onion and jalapeño into uniform, small pieces (aim for 1/4 inch cubes).
- Mince the garlic clove finely until it's almost a paste.
- Combine the drained tomatoes, diced onion, jalapeño, minced garlic, and chopped cilantro in a mixing bowl.
- Pour the fresh lime juice over the top.
- Season with the remaining salt and black pepper.
- Gently fold the ingredients together with a spoon until evenly distributed, being careful not to overmix or bruise the herbs.
