Ingredients:

  • 1 lb Roma tomatoes, seeded and finely diced
  • 1/2 cup white onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 2 tbsp fresh lime juice
  • 1 medium jalapeño, seeds removed and minced
  • 1 small garlic clove, minced
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Place diced tomatoes in a colander and sprinkle with a pinch of salt.
  2. Let them sit for 5–10 minutes until you see liquid pooling at the bottom.
  3. Dice the white onion and jalapeño into uniform, small pieces (aim for 1/4 inch cubes).
  4. Mince the garlic clove finely until it's almost a paste.
  5. Combine the drained tomatoes, diced onion, jalapeño, minced garlic, and chopped cilantro in a mixing bowl.
  6. Pour the fresh lime juice over the top.
  7. Season with the remaining salt and black pepper.
  8. Gently fold the ingredients together with a spoon until evenly distributed, being careful not to overmix or bruise the herbs.
