Ingredients:

  • 2 cups strawberries, hulled and halved (300 g)
  • 2 cups pineapple, diced (250 g)
  • 2 cups blueberries (300 g)
  • 2 cups kiwi, peeled and sliced (280 g)
  • 1 cup grapes, halved (150 g)
  • 1 banana, sliced (120 g)
  • ½ cup Greek yogurt, plain (120 g)
  • ¼ cup honey (85 g)
  • 1 tablespoon fresh lime juice (15 mL)
  • 1 teaspoon vanilla extract (5 mL)

Instructions:

  1. Wash all fruits thoroughly, hull and halve strawberries, dice pineapple, slice kiwi and banana, and halve grapes. Combine all in a large mixing bowl.
  2. In a separate bowl, whisk together Greek yogurt, honey, lime juice, and vanilla extract until smooth.
  3. Pour the dressing over the fruit mixture and gently toss to coat.
  4. Cover with plastic wrap and chill in the refrigerator for at least 30 minutes.
  5. Serve immediately, garnished with mint leaves if desired.
