Ingredients:
- 2 cups strawberries, hulled and halved (300 g)
- 2 cups pineapple, diced (250 g)
- 2 cups blueberries (300 g)
- 2 cups kiwi, peeled and sliced (280 g)
- 1 cup grapes, halved (150 g)
- 1 banana, sliced (120 g)
- ½ cup Greek yogurt, plain (120 g)
- ¼ cup honey (85 g)
- 1 tablespoon fresh lime juice (15 mL)
- 1 teaspoon vanilla extract (5 mL)
Instructions:
- Wash all fruits thoroughly, hull and halve strawberries, dice pineapple, slice kiwi and banana, and halve grapes. Combine all in a large mixing bowl.
- In a separate bowl, whisk together Greek yogurt, honey, lime juice, and vanilla extract until smooth.
- Pour the dressing over the fruit mixture and gently toss to coat.
- Cover with plastic wrap and chill in the refrigerator for at least 30 minutes.
- Serve immediately, garnished with mint leaves if desired.
