Ingredients:

  • 1 cup (200 g) Granulated Sugar
  • 1 cup (240 ml) Filtered Water
  • 1 cup (100 g) Fresh Ginger, peeled and thinly sliced
  • 3 cups (710 ml) Quality White Rum
  • 5 cups (1.2 litres) Unsweetened Cranberry Juice (pure, not cocktail blend)
  • 1 cup (240 ml) Fresh Lime Juice (about 8-10 limes)
  • 4 x 12 oz bottles (approx. 1.4 litres) Premium Ginger Beer
  • 2 large Oranges, sliced into thin wheels (for garnish)
  • 1/2 cup (75 g) Fresh Cranberries (for visual appeal)
  • Generous amount of Ice

Instructions:

  1. Combine Ingredients: In a medium saucepan, combine the sugar, water, and sliced fresh ginger for the syrup.
  2. Simmer and Steep: Bring the mixture to a gentle boil over medium heat, stirring until the sugar is fully dissolved. Once boiling, reduce the heat and simmer very gently for 10 minutes to extract the ginger flavor.
  3. Cool Completely: Remove the saucepan from the heat, cover it, and let the syrup steep for another 30 minutes. Strain the syrup through a fine-mesh sieve, discarding the ginger solids. Refrigerate the syrup until completely chilled (about 1 hour).
  4. Combine Liquids: In your large punch dispenser or pitcher, combine 1.5 cups (360 ml) of the chilled Ginger Syrup, White Rum, Unsweetened Cranberry Juice, and Fresh Lime Juice.
  5. Whisk and Taste: Stir the mixture vigorously. Taste a small sample and adjust sweetness or tartness with additional syrup or lime juice, if necessary.
  6. Chill: Cover the punch base and refrigerate for a minimum of 2 hours, or up to 24 hours, to allow the flavors to meld.
  7. Set Up and Garnish: Just before serving, transfer the chilled punch base to your final serving vessel. Fill the serving vessel halfway with fresh, high-quality ice. Add the fresh cranberries and orange slices.
  8. Introduce the Fizz: Top the punch base with the chilled Ginger Beer. This should only be done at the moment you plan to serve to retain carbonation.
  9. Final Stir and Serve: Give one gentle final stir to combine the ginger beer without losing too many bubbles. Ladle into individual glasses filled with fresh ice and enjoy.
