Ingredients:
- 1 cup High-quality Mayonnaise
- 2 tbsp Yellow Mustard
- 4 tbsp Sweet Pickle Relish
- 1 tsp White Vinegar
- 1 tbsp Finely Minced White Onion
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Smoked Paprika
- 0.5 tsp White Pepper
- 0.5 tsp Salt
Instructions:
- Prep the onion. Mince the white onion until it's almost a paste. Note: This allows the onion juice to mix with the vinegar for a better flavor distribution.
- Combine the base. Whisk the 1 cup of mayonnaise and 2 tbsp of yellow mustard in a medium glass bowl until the mixture is a uniform pale yellow.
- Incorporate the relish. Fold in the 4 tbsp of sweet pickle relish. Observe the texture becoming slightly speckled.
- Add the aromatics. Stir in the minced onion and 1 tsp of white vinegar.
- Whisk in the spices. Sprinkle the garlic powder, onion powder, smoked paprika, white pepper, and salt over the top.
- Blend thoroughly. Whisk vigorously for 30 seconds until the sauce turns a light, dusty orange.
- Taste for balance. Adjust the salt if necessary, though the relish and mustard usually provide enough.
- Transfer to storage. Pour the sauce into an airtight container. Note: The sauce will look thinner now than it will after resting.
- The Chill Phase. Refrigerate for at least 1 hour. Wait until the color deepens to a rich, sunset orange.
- Final Stir. Give the sauce one last quick whisk before serving to redistribute any settled relish.
