Ingredients:

  • 2 ripe avocados (about 350g)
  • 2 tablespoons fresh lime juice (30ml)
  • 1 clove garlic, minced
  • ½ cup Greek yogurt (120g)
  • ¼ cup fresh cilantro leaves (15g, packed)
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • Water, as needed for desired consistency

Instructions:

  1. Cut avocados in half, remove pits, and scoop flesh into the blender.
  2. Mince the garlic and measure out lime juice and yogurt.
  3. Add avocados, lime juice, garlic, Greek yogurt, and cilantro to the blender.
  4. Add salt and black pepper to taste.
  5. Blend on high until creamy, using a rubber spatula to scrape down the sides as needed.
  6. Add water a tablespoon at a time until the desired consistency is achieved. Blend again.
  7. Taste the dressing and adjust seasoning if needed.
  8. Transfer to a bowl or jar. Enjoy immediately or store in the refrigerator for up to 3 days.
