Ingredients:
- 1 (12 ounce) package vanilla wafers, finely crushed (approx. 340g)
- 1 cup confectioners' sugar (120g), plus extra for rolling
- 1/2 cup unsweetened cocoa powder (40g)
- 1 cup finely chopped pecans or walnuts (100g)
- 1/2 cup dark rum (120ml)
- 1/4 cup light corn syrup (80ml)
Instructions:
- Combine crushed vanilla wafers, confectioners' sugar, cocoa powder, and chopped nuts in a large bowl.
- In a separate bowl, whisk together the rum and corn syrup.
- Pour the rum mixture over the dry ingredients. Mix well until everything is evenly moistened and forms a slightly sticky dough.
- Roll the mixture into 1-inch balls.
- Roll each ball in confectioners' sugar to coat.
- Place the rum balls on a baking sheet lined with parchment paper or plastic wrap. Cover loosely and refrigerate for at least 2 hours, or preferably overnight.
- Before serving, roll the rum balls in confectioners' sugar again for a fresh, snowy look (optional).
