Ingredients:
- 2 medium Delicata squash (approx. 2 lbs)
- 2 tbsp melted unsalted butter
- 3 tbsp packed light brown sugar
- 1 tbsp pure maple syrup
- 1/2 tsp ground cinnamon
- 1/4 tsp kosher salt
- 1/4 tsp cracked black pepper
Instructions:
- Wash the squash thoroughly, slice off both ends, halve the squash lengthwise, and scoop out the seeds.
- Slice the squash into 1/2-inch thick rings, leaving the skin on.
- In a small bowl, whisk together the melted butter, brown sugar, maple syrup, cinnamon, salt, and pepper until the sugar has mostly dissolved.
- Toss the squash rings in the glaze mixture until every surface is evenly coated.
- Arrange the rings in a single layer on a parchment-lined baking sheet, ensuring they are not touching.
- Roast at 400°F (200°C) for 20–25 minutes, flipping the rings halfway through, until the edges are deep brown and the centers are tender.
