Ingredients:

  • 2 medium Delicata squash (approx. 2 lbs)
  • 2 tbsp melted unsalted butter
  • 3 tbsp packed light brown sugar
  • 1 tbsp pure maple syrup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Wash the squash thoroughly, slice off both ends, halve the squash lengthwise, and scoop out the seeds.
  2. Slice the squash into 1/2-inch thick rings, leaving the skin on.
  3. In a small bowl, whisk together the melted butter, brown sugar, maple syrup, cinnamon, salt, and pepper until the sugar has mostly dissolved.
  4. Toss the squash rings in the glaze mixture until every surface is evenly coated.
  5. Arrange the rings in a single layer on a parchment-lined baking sheet, ensuring they are not touching.
  6. Roast at 400°F (200°C) for 20–25 minutes, flipping the rings halfway through, until the edges are deep brown and the centers are tender.
