Ingredients:
- 3 cups (270g) rolled oats (not instant)
- 1 cup (100g) chopped nuts (almonds, walnuts, pecans, or a mix)
- 1/2 cup (60g) seeds (pumpkin, sunflower, or flax)
- 1/4 cup (60ml) maple syrup (or honey)
- 1/4 cup (60ml) coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 4 cups (approx. 1 kg) plain Greek yogurt (full-fat or non-fat, your choice!)
- Assorted fresh fruits, washed and sliced (berries, bananas, peaches, kiwi, etc.) - approx. 4 cups total
- Optional: Honey or agave nectar, for drizzling
- Optional: Chia seeds or flax seeds, for sprinkling
- Optional: Shredded coconut
- Optional: Chocolate chips, mini or regular size.
- Optional: Nut butter drizzle
Instructions:
- Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
- In a large bowl, combine oats, nuts, and seeds.
- In a separate small bowl, whisk together maple syrup, melted coconut oil, vanilla extract, cinnamon, and salt.
- Pour the wet ingredients over the dry ingredients and stir until evenly coated.
- Spread the granola in an even layer on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until golden brown and fragrant. Watch carefully to avoid burning, especially around the edges.
- Let the granola cool completely on the baking sheet. It will crisp up as it cools.
- Arrange Greek yogurt in a large bowl. Place the cooled granola and assorted toppings in separate bowls or containers.
- Let everyone build their own parfaits by layering yogurt, granola, and toppings in serving bowls or glasses. Drizzle with honey or nut butter if desired.
