Ingredients:
- 2 large eggs
- 2 tablespoons (30ml) unsalted butter
- 1 clove garlic, minced
- 1 sprig fresh thyme (or ½ teaspoon dried thyme)
- Salt and freshly ground black pepper, to taste
- Optional: Pinch of red pepper flakes (for a little kick)
Instructions:
- Melt butter in the non-stick pan over medium heat. Add minced garlic and thyme sprig (or dried thyme).
- Gently crack the eggs into the pan, keeping them separate.
- Once the whites start to set, tilt the pan and use a spoon to scoop up the melted butter and pour it over the eggs, concentrating on the whites.
- Continue basting until the whites are fully set but the yolks are still runny (or to your preference). Adjust heat if necessary to prevent burning.
- Carefully remove the eggs from the pan with a spatula. Season with salt, pepper, and red pepper flakes (if using). Serve immediately.
