Ingredients:

  • 2 large eggs
  • 2 tablespoons (30ml) unsalted butter
  • 1 clove garlic, minced
  • 1 sprig fresh thyme (or ½ teaspoon dried thyme)
  • Salt and freshly ground black pepper, to taste
  • Optional: Pinch of red pepper flakes (for a little kick)

Instructions:

  1. Melt butter in the non-stick pan over medium heat. Add minced garlic and thyme sprig (or dried thyme).
  2. Gently crack the eggs into the pan, keeping them separate.
  3. Once the whites start to set, tilt the pan and use a spoon to scoop up the melted butter and pour it over the eggs, concentrating on the whites.
  4. Continue basting until the whites are fully set but the yolks are still runny (or to your preference). Adjust heat if necessary to prevent burning.
  5. Carefully remove the eggs from the pan with a spatula. Season with salt, pepper, and red pepper flakes (if using). Serve immediately.
