Ingredients:

  • 1 lb imitation crab meat, finely chopped
  • 1/2 cup mayonnaise
  • 1 large egg, beaten
  • 1 tbsp Cajun seasoning
  • 1 tsp Worcestershire sauce
  • 1 tbsp fresh lemon juice
  • 2 tbsp celery, finely diced
  • 2 tbsp green onions, finely minced
  • 1/4 cup saltine crackers, finely crushed
  • 1/2 cup panko breadcrumbs
  • 3 tbsp unsalted butter
  • 2 tbsp vegetable oil

Instructions:

  1. Finely chop the imitation crab meat, using a mix of minced pieces and larger shreds for structural integrity.
  2. In a large bowl, whisk together the beaten egg, mayonnaise, Cajun seasoning, Worcestershire sauce, and lemon juice until a smooth paste forms.
  3. Fold in the chopped crab, diced celery, and minced green onions. Gently stir in the crushed saltine crackers to bind the mixture.
  4. Divide the mixture into 8 equal portions and shape into pucks approximately 1 inch thick.
  5. Gently press each side of the cakes into panko breadcrumbs to coat.
  6. Heat butter and vegetable oil over medium heat until the butter foams.
  7. Sear the cakes for 3-4 minutes per side until a mahogany-colored crust forms and the edges are crisp.
