Ingredients:

  • 2 large russet potatoes (about 600g / 1.3 lbs), peeled or unpeeled, cut into 1/2-inch thick fries
  • Vegetable oil or peanut oil (for frying), about 4 cups (approximately 950ml)
  • 2 tablespoons paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon dried thyme

Instructions:

  1. Wash, peel (optional), and cut the potatoes into even-sized fries.
  2. Soak the cut fries in cold water for at least 30 minutes (or up to 2 hours). Drain well and pat dry with paper towels.
  3. In a small bowl, combine all the Cajun spice ingredients.
  4. Heat the vegetable or peanut oil in a large pot or deep fryer to 350°F (175°C).
  5. Carefully add the fries to the hot oil in batches, ensuring not to overcrowd the pot.
  6. Fry for 5-7 minutes, until the fries are softened but not browned. Remove with a slotted spoon and place on a wire rack or paper towels.
  7. Increase the oil temperature to 375°F (190°C). Fry the fries again for 2-3 minutes, or until golden brown and crispy.
  8. Remove the fries from the oil and immediately toss them with the Cajun spice mixture in a large bowl.
  9. Serve the Cajun fries immediately.
