Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 ounces each or 170 grams)
  • 2 tablespoons olive oil (30 ml)
  • Salt and pepper, to taste
  • 2 large ripe tomatoes, sliced (or 1 cup cherry tomatoes, halved)
  • 8 ounces fresh mozzarella cheese, sliced (225 grams)
  • 1 cup fresh basil leaves (packed) (about 20 grams)
  • ¼ cup balsamic glaze (60 ml)

Instructions:

  1. Preheat the oven to 375°F (190°C) if using.
  2. Use a meat mallet to gently flatten the chicken breasts to an even thickness of about ¾ inch. Season both sides with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5-6 minutes until golden brown; flip and cook for another 5 minutes.
  4. Layer tomato slices over each chicken breast. Top with mozzarella slices and a few basil leaves.
  5. If oven-safe, transfer the skillet to the oven and bake for 10 minutes, or cover the skillet and cook on the stovetop until the cheese is melted and bubbly (internal temperature should reach 165°F/75°C).
  6. Drizzle with balsamic glaze, garnish with remaining basil, and serve.
