Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • ¾ cup warm water
  • 2 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tbsp melted butter
  • 1 tbsp chopped fresh parsley (optional)

Instructions:

  1. In a bowl, combine warm water, yeast, and sugar. Let sit for 5-10 minutes until frothy.
  2. In a mixing bowl, whisk together flour and salt.
  3. Add the activated yeast mixture and olive oil. Stir until combined.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth.
  5. Place the dough in a greased bowl. Cover with a kitchen towel or plastic wrap. Let it rise in a warm place for 30 minutes or until doubled in size.
  6. In a bowl, mix together mozzarella, Parmesan, garlic powder, and Italian seasoning.
  7. Preheat the oven to 425°F (220°C).
  8. Punch down the dough and roll it out into a rectangle (about ¼ inch thick).
  9. Cut the rectangle into strips and place a tablespoon of cheese filling on one end of each strip. Roll up tightly.
  10. Place the stuffed breadsticks on a lined baking sheet. Cover and let rise for another 15 minutes.
  11. Brush the tops with melted butter. Bake for 12-15 minutes, or until golden brown and cheesy.
  12. Sprinkle with fresh parsley if desired. Serve warm.
