Ingredients:
- 1 pound (450g) large, ripe strawberries, hulled
- 4 ounces (115g) cream cheese, softened to room temperature
- 1/4 cup (50g) granulated sugar
- 1/4 teaspoon vanilla extract
- 2 tablespoons (30ml) heavy cream
- Chocolate shavings (optional)
- Crushed graham crackers (optional)
- Sprinkles (optional)
Instructions:
- Wash strawberries and pat dry. Slice off the top of each strawberry with a knife in a way that allows you to create a hallowed inside space.
- In a mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
- Mix in the vanilla extract and heavy cream until well combined and the filling is light and fluffy.
- Transfer the cheesecake filling to a piping bag or ziplock bag. If using a ziplock bag, cut off a small corner. Pipe the filling into the hollowed-out strawberries.
- Arrange the filled strawberries on a plate or platter. Refrigerate for at least 30 minutes to allow the filling to set.
- Before serving, sprinkle the strawberries with your choice of toppings (chocolate shavings, crushed graham crackers, sprinkles, etc.). Serve immediately and enjoy!
