Ingredients:

  • 1 pound (450g) large, ripe strawberries, hulled
  • 4 ounces (115g) cream cheese, softened to room temperature
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons (30ml) heavy cream
  • Chocolate shavings (optional)
  • Crushed graham crackers (optional)
  • Sprinkles (optional)

Instructions:

  1. Wash strawberries and pat dry. Slice off the top of each strawberry with a knife in a way that allows you to create a hallowed inside space.
  2. In a mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
  3. Mix in the vanilla extract and heavy cream until well combined and the filling is light and fluffy.
  4. Transfer the cheesecake filling to a piping bag or ziplock bag. If using a ziplock bag, cut off a small corner. Pipe the filling into the hollowed-out strawberries.
  5. Arrange the filled strawberries on a plate or platter. Refrigerate for at least 30 minutes to allow the filling to set.
  6. Before serving, sprinkle the strawberries with your choice of toppings (chocolate shavings, crushed graham crackers, sprinkles, etc.). Serve immediately and enjoy!
