Ingredients:

  • 1 ¾ cups (210 g) Low-Moisture Shredded Mozzarella
  • 2 oz (56 g) Full-Fat Cream Cheese, cut into chunks
  • ½ cup (60 g) Coconut Flour, sifted
  • 1 tsp (5 g) Xanthan Gum
  • 1 Tbsp (15 g) Baking Powder
  • ½ tsp (3 g) Fine Sea Salt
  • 2 Large Eggs (1 for dough, 1 for wash), room temperature
  • 1 tsp (5 ml) Cold Water (for egg wash)
  • 3 Tbsp (45 g) Everything Bagel Seasoning (for topping)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Combine Dry Ingredients: In a medium bowl, whisk together the coconut flour, xanthan gum, baking powder, and salt. Set aside.
  3. Melt the Cheeses: Combine the shredded mozzarella and cubed cream cheese in a microwave-safe bowl. Microwave in 30-45 second bursts, stirring until the cheese is fully melted, glossy, and smooth.
  4. Incorporate Dry Ingredients: Add the pre-whisked dry mixture to the melted cheese. Stir quickly and vigorously with a wooden spoon or spatula until a shaggy, dense dough begins to form.
  5. Add the Egg: Once the dough is cool enough to handle, add the room-temperature egg (the first one). Work quickly to incorporate the egg fully until a consistent, slightly sticky ball forms.
  6. Rest the Dough: Let the dough rest for 10–15 minutes. This allows the coconut flour and xanthan gum to fully hydrate, which improves shaping texture.
  7. Divide and Shape: Divide the dough evenly into 6 portions. Roll each portion into a rope or ball. Connect the ends to form a bagel shape, pinching the seam firmly closed, or poke a hole through the center and stretch into the ring shape.
  8. Prepare and Apply Glaze: Whisk the remaining egg with 1 teaspoon of cold water to create the egg wash. Brush the egg wash generously over the surface of each bagel. Immediately sprinkle with Everything Bagel Seasoning.
  9. Bake: Transfer the sheet to the preheated oven. Bake for 20–25 minutes, rotating the pan halfway through, until the bagels are golden brown and sound hollow when tapped.
  10. Cool: Transfer the bagels to a wire rack immediately to cool completely before serving.
