Ingredients:

  • 1 1/2 cups (300g) long-grain white rice, rinsed
  • 3 cups (720ml) water
  • 1/2 teaspoon salt (2.5g)
  • 2 tablespoons (30ml) olive oil
  • 1/2 small onion, finely chopped (approx. 50g)
  • 2 cloves garlic, minced (approx. 6g)
  • 1-2 chipotle peppers in adobo sauce, minced (10-20g)
  • 1 teaspoon adobo sauce (approx. 5g)
  • Juice of 1 lime (approx. 30ml)
  • 1/4 cup (15g) fresh cilantro, chopped

Instructions:

  1. Rinse the rice thoroughly under cold water until the water runs clear.
  2. Heat olive oil in a saucepan over medium heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook for another minute until fragrant.
  3. Add the minced chipotle peppers and adobo sauce to the saucepan and cook for 30 seconds, stirring constantly.
  4. Add the rinsed rice, water, and salt to the saucepan. Bring to a boil over high heat.
  5. Once boiling, reduce heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15 minutes. Do not lift the lid during this time!
  6. Remove the saucepan from the heat and let it sit, covered, for 10 minutes.
  7. Fluff the rice with a fork. Stir in the lime juice and cilantro. Serve immediately and enjoy your chipotle white rice recipe!
