Ingredients:
- 1 1/2 cups (300g) long-grain white rice, rinsed
- 3 cups (720ml) water
- 1/2 teaspoon salt (2.5g)
- 2 tablespoons (30ml) olive oil
- 1/2 small onion, finely chopped (approx. 50g)
- 2 cloves garlic, minced (approx. 6g)
- 1-2 chipotle peppers in adobo sauce, minced (10-20g)
- 1 teaspoon adobo sauce (approx. 5g)
- Juice of 1 lime (approx. 30ml)
- 1/4 cup (15g) fresh cilantro, chopped
Instructions:
- Rinse the rice thoroughly under cold water until the water runs clear.
- Heat olive oil in a saucepan over medium heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook for another minute until fragrant.
- Add the minced chipotle peppers and adobo sauce to the saucepan and cook for 30 seconds, stirring constantly.
- Add the rinsed rice, water, and salt to the saucepan. Bring to a boil over high heat.
- Once boiling, reduce heat to low, cover the saucepan with a tight-fitting lid, and simmer for 15 minutes. Do not lift the lid during this time!
- Remove the saucepan from the heat and let it sit, covered, for 10 minutes.
- Fluff the rice with a fork. Stir in the lime juice and cilantro. Serve immediately and enjoy your chipotle white rice recipe!
