Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large (50g) egg
- 2 tsp (10ml) vanilla extract
- 2 1/2 cups (310g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/4 tsp (1.5g) salt
- Red gel food coloring
- Green gel food coloring
- 2 tbsp (25g) red sanding sugar
Instructions:
- Cream the softened butter and granulated sugar together using an electric mixer until the mixture is pale and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt, then gradually mix into the wet ingredients until a soft dough forms.
- Divide the dough into three equal portions. Leave one portion white. Knead red gel coloring into the second portion and green gel coloring into the third until colors are uniform.
- Roll each colored dough into a rectangle of approximately 6x4 inches using parchment paper. Stack the rectangles in the order: Red, White, then Green.
- Press down firmly with palms to remove air pockets. Starting from the long edge, roll the stacked dough tightly into a log.
- Wrap the log tightly in plastic wrap and refrigerate for 1 hour until firm.
- Preheat oven to 350°F (175°C).
- Using a sharp non-serrated knife, slice the chilled log into 1/2 inch (1.25cm) thick discs.
- Roll the edges of each disc in red sanding sugar and place on a parchment-lined baking sheet.
- Bake for 12-15 minutes, or until the bottoms are just barely golden.
