Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large (50g) egg
  • 2 tsp (10ml) vanilla extract
  • 2 1/2 cups (310g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 1/4 tsp (1.5g) salt
  • Red gel food coloring
  • Green gel food coloring
  • 2 tbsp (25g) red sanding sugar

Instructions:

  1. Cream the softened butter and granulated sugar together using an electric mixer until the mixture is pale and fluffy.
  2. Beat in the egg and vanilla extract until fully incorporated.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt, then gradually mix into the wet ingredients until a soft dough forms.
  4. Divide the dough into three equal portions. Leave one portion white. Knead red gel coloring into the second portion and green gel coloring into the third until colors are uniform.
  5. Roll each colored dough into a rectangle of approximately 6x4 inches using parchment paper. Stack the rectangles in the order: Red, White, then Green.
  6. Press down firmly with palms to remove air pockets. Starting from the long edge, roll the stacked dough tightly into a log.
  7. Wrap the log tightly in plastic wrap and refrigerate for 1 hour until firm.
  8. Preheat oven to 350°F (175°C).
  9. Using a sharp non-serrated knife, slice the chilled log into 1/2 inch (1.25cm) thick discs.
  10. Roll the edges of each disc in red sanding sugar and place on a parchment-lined baking sheet.
  11. Bake for 12-15 minutes, or until the bottoms are just barely golden.
