Ingredients:

  • 45 Saltine crackers
  • 1 cup unsalted butter
  • 1 cup light brown sugar, firmly packed
  • 1/2 tsp pure vanilla extract
  • 1/4 tsp fine sea salt
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup pecans, finely chopped
  • 1 tbsp festive holiday sprinkles

Instructions:

  1. Preheat oven to 350°F (175°C). Line a 10x15 inch rimmed baking sheet with parchment paper and arrange crackers in a single, tight layer covering the bottom.
  2. In a medium heavy-bottomed saucepan, combine butter and brown sugar over medium heat. Stir until melted and the mixture reaches a full rolling boil.
  3. Once boiling, stop stirring and boil for exactly 3 minutes. Remove from heat and immediately stir in the vanilla extract and sea salt.
  4. Pour the hot toffee mixture over the crackers and spread evenly with a spatula. Bake in the preheated oven for 5 to 7 minutes until bubbly.
  5. Remove from oven and immediately sprinkle chocolate chips over the top. Let sit for 3 minutes to melt, then spread the chocolate into an even layer using an offset spatula.
  6. Top with chopped pecans and festive sprinkles. Allow to cool completely at room temperature, then refrigerate for at least 2 hours before breaking into pieces.
