Ingredients:

  • 4 (6-ounce) mahi mahi fillets
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • 2 ripe avocados, diced
  • 1 medium tomato, diced
  • 1/4 red onion, finely chopped
  • 1 tablespoon fresh lime juice
  • Salt and pepper, to taste

Instructions:

  1. In a mixing bowl, whisk together lime juice, cilantro, garlic, olive oil, cumin, salt, and pepper.
  2. Place mahi mahi fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for 30 minutes.
  3. In another mixing bowl, combine diced avocados, tomato, onion, lime juice, salt, and pepper. Gently mix.
  4. Ensure the grill is preheated to medium-high heat (about 400°F/200°C).
  5. Remove the fish from the marinade and grill for 4-6 minutes per side, or until the fish flakes easily and has grill marks.
  6. Plate the grilled mahi mahi and top with the avocado salsa. Garnish with extra cilantro if desired.
