Ingredients:
- 4 (6-ounce) mahi mahi fillets
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- Salt and pepper, to taste
- 2 ripe avocados, diced
- 1 medium tomato, diced
- 1/4 red onion, finely chopped
- 1 tablespoon fresh lime juice
- Salt and pepper, to taste
Instructions:
- In a mixing bowl, whisk together lime juice, cilantro, garlic, olive oil, cumin, salt, and pepper.
- Place mahi mahi fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for 30 minutes.
- In another mixing bowl, combine diced avocados, tomato, onion, lime juice, salt, and pepper. Gently mix.
- Ensure the grill is preheated to medium-high heat (about 400°F/200°C).
- Remove the fish from the marinade and grill for 4-6 minutes per side, or until the fish flakes easily and has grill marks.
- Plate the grilled mahi mahi and top with the avocado salsa. Garnish with extra cilantro if desired.
