Ingredients:

  • 4 medium-sized Granny Smith apples (about 800 g)
  • 1 tablespoon lemon juice (15 ml)
  • 1/2 cup brown sugar (100 g)
  • 1 teaspoon ground cinnamon (5 g)
  • 1/4 teaspoon nutmeg (1 g)
  • 1 tablespoon unsalted butter, cut into small pieces (15 g)
  • 1 1/2 cups all-purpose flour (190 g)
  • 1/2 teaspoon salt (2 g)
  • 1/2 cup unsalted butter, chilled and cubed (115 g)
  • 1/4 cup granulated sugar (50 g)
  • 1 large egg yolk
  • 3-4 tablespoons cold water (45–60 ml)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and salt. Cut in chilled butter until the mixture resembles coarse crumbs. Stir in sugar, egg yolk, and cold water until a dough forms. Roll out the dough and fit it into the pie dish. Chill for 10 minutes.
  3. Core and slice the apples into thin wedges. Toss apples with lemon juice, brown sugar, cinnamon, and nutmeg until evenly coated.
  4. Fill the chilled crust with the apple mixture, dotting with butter. Optionally sprinkle a bit more cinnamon on top for added flavor.
  5. Bake in the preheated oven for 30 minutes or until apples are tender and crust is golden brown.
  6. Let cool slightly before serving. Enjoy warm or at room temperature.
